Philly Spotlight: IHOUSE BRAZILIAN BARBECUE Recap
This past Saturday I was invited to partake of a Brazilian BBQ at International House Philadelphia @ihousephilly – what I love even more than smoked and seasoned meats, is the fact that now that I live in West Philly, IHouse (37th & Chestnut Streets) is part of my neighborhood!
Every year the IHouse Board chooses a country to celebrate with a series of events. This year in honor of The 2014 FIFA World Cup they chose Brazil. You may recall Tinsel & Tine’s win an IHouse membership contest held in May was part of the Colors of Brazil Gala, previous to that was a Carnivàle and other assorted happenings, the culmination was the Brazilian BBQ.
I spoke with the man behind the grill, Mark of Kuzina by Sofia in Cherry Hill NJ, who treated us to pork spare ribs, lamb chops, large chicken legs, filet Mignon, in addition to all the buffet sides which included two of my favorites, couscous and assorted olives of every size and color. I asked Mark what’s the secret to a Brazilian Barbeque? His reply, in addition to the importance of the spices, is using the right woods, smoked out a day or two ahead of cooking the meats, so when the wood is re-used the smokey flavor is already present.

The highlight of the event was a performance of singing, dancing and Brazilian martial arts by Asca PA Capoeiva
